Apple Streusel Cupcake Muffins are absolutely one of my favourite desserts or tea time snacks. I made this for my lovely husband recently and he absolutely loved it considering he is not a massive fan of apple flavoured recipes.
Anyway, these ingredients listed will make delicious apple muffins.
Prep time: 30 minutes
Cooking Time: 20 minutes
Total Time: 1 hour including cooling period
Serves: 14 Cupcakes
Ingredients
- 1/2 tsp bicarbonate of soda.
- 280g / 10oz of apple sauce jar.
- 55g / 2 oz butter or soft margarine.
- 85g / 3 oz of demerara sugar.
- 1 large egg – beaten.
- 175g / 6 oz self-raising flour.
- 1/2 tsp ground cinnamon.
- 1/2 tsp freshly grated nutmeg, if not from bottled.
Muffin Topping
- 50g / 1 3/4 oz plain flour.
- 1/4 tsp ground cinnamon.
- 1/4 tsp grated nutmeg.
- 35g / 1 1/4 oz butter or margarine.
Cooking Method:
- Preheat the oven to 180C/350F/Gas Mark 4. Place 14 paper cases in a bun tin.
- To make the topping, put the flour, demerara sugar,cinnamon and nutmeg in a bowl. Cut the butter or margarine into small pieces,then add to the bowl. Rub it in gently with your fingertips until the mixture resembles fine breadcrumbs.
- Add the bicarbonate of soda to the apple sauce and stir until dissolved. Add butter and demerara sugar to a large bowl and beat together until it turns pale and creamy. Gradually beat in the egg. Sift the flour, cinnamon, and nutmeg using a metal spoon. Fold in the mixture, alternating with the applesauce mixture.
- Divide the mixture evenly between the paper cases. Scatter the topping over the cupcakes and press down gently. Bake in the preheated oven for further 20 minutes, or until risen slightly over the cover, golden and firm to the touch. Transfer to a wire rack and leave to cool before eating.
